Fresh Greens Salad with French Vinaigrette

  • Yield: 4 1x


  • ~4 cups  Fresh greens – your choice
  • 1/2 shallot, minced
  • 1 ½ teaspoons dijon mustard
  • 2  Tablespoons lemon juice
  • 1 Tablespoon wine vinegar
  • ½ cup extra virgin olive oil
  • Salt and pepper to taste


  1. In a large bowl combine the shallot, mustard, salt, lemon juice and vinegar Whisk to combine
  2. Very slowly whisk in a few drops of oil to begin the emulsification. Repeat until emulsification begins and is stable. Continue to add oil in small amounts, whisking to combine.
  3. Add pepper, seasonings, and herbs. Taste and adjust seasonings. Wait to dress the salad until right before serving. If your salad is smaller – don’t use all the dressing. (Wise words: You can dress a salad, but you can’t undress it)
