Fresh Greens Salad with French Vinaigrette

- ~4 cups Fresh greens – your choice
- 1/2 shallot, minced
- 1 ½ teaspoons dijon mustard
- 2 Tablespoons lemon juice
- 1 Tablespoon wine vinegar
- ½ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large bowl combine the shallot, mustard, salt, lemon juice and vinegar Whisk to combine
- Very slowly whisk in a few drops of oil to begin the emulsification. Repeat until emulsification begins and is stable. Continue to add oil in small amounts, whisking to combine.
- Add pepper, seasonings, and herbs. Taste and adjust seasonings. Wait to dress the salad until right before serving. If your salad is smaller – don’t use all the dressing. (Wise words: You can dress a salad, but you can’t undress it)
